Raw/Vegan – Banana Coconut Pie


Not your typical dessert, this raw/vegan pie is full of essential vitamins & minerals as well as a full spectrum of complete protein. ¬†Believe it or not, a half slice of this would make an excellent pre or post workout snack!..And did I mention it’
s delicious!

Prepair in order & refrigerate for at least one hour before serving. (Serves up to 8 slices)

Crust – Blend the following ingredients in food processor until desired texture.

1 cup dried dates
1/2 cup shredded coconut
1/2 cup ground chia seeds
1/2 cup hemp protien or vanilla chai VegaOne
1/2 cup sunflower seeds
1 tbsp grated fresh ginger
1 tsp lemon juice

Filling – blend in food processor until creamy & spead over crust.

1 red pear
2 bananas
1/2 cup shredded coconut
1/2 cup raw macadamia nuts
1/4 cup hemp protein or vanilla chai VegaOne
1/4 cup sunflower seeds
1 tbsp grated fresh ginger

Topping – Pulse several times in food process & spread evenly over pie.

1/2 cup raw sunflower seeds
1/2 cup raw macadamia nuts
1/4 cup shredded coconut
1/2 tbsp cinnamon

    Is there one particular store where you shop close to RMR? I like Sprouts, my favorite is Trader Joes but I will go as far as Whole Foods. I prefer (1 )store shopping.

      Hi there! Sorry it’s taken me a few days to get back to you. In my opinion Sprouts (on Higley and Southern) is the best location to grocery shop in the Mesa area. However, If you’re in other areas of the valley frequently, I recommend going to Whole Foods Market. (http://www.wholefoodsmarket.com). They have locations in Chandler, Tempe and Scottsdale.
