Veggie Pita & Roasted Sweet Potato Fries

 

(Serves 2)

Ingredients:

  • 100% whole wheat pitas
  • 1 medium tomato
  • 1/2 cup white mushrooms
  • 1 avocado
  • 1 cup organic spinach
  • 1 sweet potato
  • Cilantro
  • Dijon mustard
  • Sea salt
  • Cracked pepper
  • Extra virgin olive oil

 

Preparation:

  1. Pre heat oven to 425 degrees. Slice sweet potato into thin long fries. Place on cookie or pizza sheet and lightly drizzle with extra virgin olive oil. Sparingly crack fresh sea salt and pepper over potatoes. Cook for apox 6-20 minutes or until lightly crisp on outside, yet soft through (depends on how thinly you sliced your fries.)
  2. Cut pitas in half and spread Dijon mustard inside. Stuff with sliced raw veggies and spinach.
  3. Drizzle stuffed pitas with a tablespoon of olive oil and a pinch of fresh cracked sea salt and pepper.

 

 Tip:

To help keep your pita from tearing during preparation, try very lightly heating or toasting it first!
