Sweet Potato Brownies

Sweet Potato Brownies

 

(Serves 8-10)

Ingredients:

  • 1/4 cup unsweetened applesauce
  • 2/3 cup cocoa powder
  • 1/4 cup brown rice flour
  • 1/4 cup sorghum flour
  • 1/4 tsp sea salt
  • 1/4 tsp baking powder
  • 1/2 cup turbinado sugar
  • 2/3 cup pureed cooked sweet potatoes
    (bake 2 medium sweet potatoes at 415° for aprox 30min or until soft, then whip with fork or food processor.)
  • 1 1/2 tsp vanilla
  • up to 1/2 cup almond milk, start with 1/4 cups
  • 1/2 cup cocoa nibs
  • 1/2 cup walnuts

 

Preparation:

  1. Preheat oven to 350° and lightly oil an 8×8 baking pan.
  2. Put all of the ingredients except cocoa nibs in a large mixing bowl. Stir until everything is mixed well, adding more plant milk if needed.
  3. Fold in cocoa nibs reserving a few spoonful’s.
  4. Spread the batter smooth into the baking pan and sprinkle the reserved chocolate chips on top.
  5. Bake for 35 to 40 minutes, toothpick will not come out clean.
  6. 15 minutes prior to removing brownies from oven, sprinkle walnuts on top.

 

 Tip:

Make sure to really whip the sweet potatoes and batter thoroughly. Nothing ruins a brownie like biting into a solid chunk of sweet potato! Then, feel good about eating our favorite dessert, they are free of common allergens, rich supply of antioxidants (cocoa), high in fiber and Vitamin A and mostly organic.
