Black Bean & Mango Chipotle Tacos

Black Bean & Mango Chipotle Tacos 

 

(Serves 4)

Ingredients:

  • Corn tortillas
  • Cooked black beans (or 1 can black beans)
  • 1 head green cabbage
  • 2 mangos
  • 1/2 sweet onion
  • 1/3 green bell pepper
  • 1/3 red bell pepper
  • 1 lemon
  • Extra virgin olive oil
  • Dijion mustard
  • Sea salt
  • Cracked black pepper
  • Cilantro (optional)
  • Simple Guacamole

 

Preparation:

  1. Prep mango chipotle: In a medium blow combine chopped mango, onion and bell peppers. With clean bare hands lightly massage ingredients together to release flavors.
  2. Prep cole slaw: Finely chop cabbage. Toss with 2 table spoons of Dijon mustard, 4 table spoons olive oil, squeeze 1/2-1 lemon, sea salt and fresh cracked black pepper (to taste.)
  3. In a medium heat skillet lightly sear corn tortillas in a little olive oil.
  4. Layer tortilla, black beans, sole slaw, mango chipotle and guacamole. Garnish with cilantro.
