Black Bean & Carrot Burger

 

(Serves 6)

Ingredients:

  • 2 cans organic whole black beans (drained)
  • 2 medium/large carrots
  • 2 ears organic (non-GMO) corn (cooked and off cob)
  • 1/2 cup whole rolled oats
  • 1/3 cup pumpkin seeds
  • 1 teaspoon cinnamon
  • 1 tablespoon cummin
  • 1 tablespoon paprika
  • 1 teaspoon chili flakes
  • 1 teaspoon sea salt
  • 1 tablespoon fresh cracked black pepper

 

Preparation:

  1. In a food processor combine rolled oats and pumpkin seeds, blend for about 10-15 seconds or until coarsely ground.
  2. Add black beans (reserving 1/4 cup for later use), corn (reserve 1/4 cup for later use), shredded carrots and all seasoning into processor. Mix until all ingredients are well blended (but not so well ground it is a “smoothie texture”.)
  3. Scoop into bowl and add remaining beans and corn, mix together.
  4. On a large baking sheet form 6 medium sized patties.
  5. Bake in a preheated oven at 300 degrees for 40 mins. If you would like to grill your burgers then bake for 30 mins and grill over high heat for the remaining 10 mins.

 

Tip:

Seasoning may be “measured to taste” in the mixture, be sure to taste-test your mixture before baking. In the picture above we grilled some seasonal vegetables (wild mushroom, pablano peppers) and added fresh tomato, dill pickles and Dijon mustard on a small bed of lettuce. Enjoy with a sprouted 100% whole grain bun!
