Asian Lettuce Wraps

 

(Serves 4-6)

Ingredients:

  • 1 package medium-firm tofu (organic or sprouted)
  • 1 red bell pepper
  • 2-3 cups chopped Japanese cabbage
  • 1 cup shelled edamame
  • 1 head iceberg lettuce
  • Trader Joe’s Asian Style Spicy Peanut Vinaigrette
  • Sea salt
  • Cracked pepper
  • 2 table spoons extra virgin olive oil

 

Preparation:

  1. Drain and slice tofu into semi-thin strips or cubes. Heat skillet with olive oil. Cook the tofu on a medium high heat, cover the pan. After aprox 4-6 minutes (or until slightly crisp or browned.) Flip tofu and cook on the other side medium-to-low heat covered for another 2-4 minutes. Salt and pepper very lightly in pan.
  2. In a sauce pan steam julianned veggies (Japanese cabbage and red bell pepper), aprox 3 minutes.
  3. Peel full leafs of iceberg lettuce and fill with steamed veggies, tofu and shelled edamame.
  4. Drizzle Trader Joe’s Asian Style Spicy Peanut Vinaigrette on top, to taste.

 

 Tip:

For lunch try with a small handful of Trader Joe’s Savory Thin Mini Edamame Crackers. Yum!
