Lentil Flax Burgers

Time: 30 minutes active / 50 minutes total / Makes 4 – 6 burgers


  • 2-3 tbsp coconut oil
  • 1 carrot, shredded
  • 1 celery stalk, minced
  • 1 1/2 tbsp balsamic vinegar
  • 1 cup cooked red lentils
  • 1 tbsp sunflower seeds
  • 1/4 cup flax powder
  • Sea salt and black pepper

In a medium frying pan, heat 1 tbsp coconut oil over medium high heat.  Add the carrots and celery and saute until the veggies are soft.  Mix in the balsamic vinegar, remove from heat and transfer to a large bowl.

Add the remaining ingredients to the vegetable mixture  and mix well, mashing the lentils slightly with a fork.  Adjust salt as needed.  Place in the fridge for 20 minutes to allow the flaxseed to help firm the mixture.  Hand-shape into 4-6 burgers.

Heat a small amount of coconut oil in a large pan over low heat.  Put burgers on the pan and cook until brown underneath (about 10 min).  Flip burgers over and repeat on the other side.


Black Bean Oat Burger

Makes about 8 burgers

  • 1 Can of black beans, rinsed and drained
  • 1 can of tomatoes with zesty mild chilies, drained
  • 1 garlic clove, minced or pressed
  • 1 cup chopped carrots
  • 1 cup parsley or cilantro
  • 2 cups quick rolled oats
  • 8 sprouted or whole grain buns

Preheat oven to 450 Degrees. Put the first seven ingredients in a food processor.  Place contents in a large bowl and stir in the oats.  Form into patties, place on a sprayed baking sheet and bake for 8 minutes.  turn oven up to broil and cook for 2 more minutes, until the tops are nicely browned.  Toast the buns and pile on your favorite plant based toppings!

Raw/Vegan – Banana Coconut Pie

Not your typical dessert, this raw/vegan pie is full of essential vitamins & minerals as well as a full spectrum of complete protein.  Believe it or not, a half slice of this would make an excellent pre or post workout snack!..And did I mention it’
s delicious!

Prepair in order & refrigerate for at least one hour before serving. (Serves up to 8 slices)
